Autumn Soup

Here is a recipe that a great friend, Marion shared with Chris and I. She made it for us when we visited her and her husband, Don last week. She used ground turkey instead of ground beef, served it with french bread slices and butter and it was DELICIOUS! WE hope you all enjoy!

Autumn Soup

1 lb. ground meat
4 cups hot water
1 can beef broth
1 can tomatoes or six whole fresh tomatoes
2 teas. salt
1/2 teas. pepper
pinch of basil
1 bay leaf
1 or more clove garlic
1 cup cut up celery
1 cup chopped onions
1 cup thinly sliced carrots
1 cup cubed potatoes
1/4 cup barley

Brown meet and onions in large kettle. Cook about 5 min. Skim off fat.
Add remaining ingredients. Bring to a boil and simmer about 40 min. I
usually add potatoes about the last 20 min.. Sometimes I add more
carrots and potatoes but with barley you may not want to do that.
It really is more tasty the next day.
